The Blue Bay Marcel Ravin** reveals its Metamorphosis

After a five-month transformation, the Blue Bay restaurant at Monte-Carlo Bay Hotel & Resort has evolved into the Blue Bay Marcel Ravin. The new establishment was inaugurated on February 10, 2024, in the presence of H.S.H. Prince Albert II, Stéphane Valeri, Deputy Chairman of Monte-Carlo Société des Bains de Mer, Frédéric Darnet, Managing Director of Monte-Carlo Bay Hotel & Resort, and Chef Marcel Ravin, before opening to the public on February 14. With two Michelin stars since 2022 and this significant transformation, Chef Ravin has achieved the realization of a dream, a belief, and a genuine dedication to his culinary vision. This journey began with his approach to cuisine and table presentation, which has now been enriched by connecting the plate with its surroundings, creating an ambiance that enhances both the food and the service. Within this new setting, La Table de Marcel offers a personalized and even more exclusive experience for eight guests.

The revamped Blue Bay Marcel Ravin pays homage to life, nature, and the vibrant culture of the Caribbean, serving as a comprehensive showcase of the chef’s gastronomic expertise. A sincere and bold culinary journey lies at the core of the gastronomic revival within the Monte-Carlo Société des Bains de Mer Group.

The restaurant’s new design is inspired by life, nature, and the diverse beauty of the Caribbean. Marcel Ravin conceived an organic concept based on the five elements, harmonizing with his culinary style. It’s a space where emotions and sensations intersect, providing a personal encounter with the chef’s gastronomic heritage, shaped by his Caribbean roots, Mediterranean influences, and global travels across five continents. Inspired by nature, the universe of the new Blue Bay Marcel Ravin is anchored in the five fundamental movements represented by fire, earth, metal, water, and wood.

Woodwork, tapestries adorned with botanical motifs, and a play of light and embers create an intimate connection with the chef and his culinary universe, seamlessly aligning with the work carried out in the kitchen.

The updated menu introduces a range of new offerings to complement the existing set menus. Signature dishes include the Monte-Carlo egg with cassava truffle maracuja, the acclaimed Buckler sorrel lacté served in a calbas for an immersive experience, and the nostalgic “chocolate of my childhood” from Martinique. Among the new additions are tantalizing options such as Chicken Madras “Boucan d’Enfer,” Lovely lobster dumpling with coconut milk curry, and Soccade lamb colombo in razié crust. Menus will evolve every three weeks in sync with seasonal offerings from the chef’s gardens.

Innovative “food & wine” pairings crafted by the chef and sommelier, as well as alcohol-free “food & aromas” combinations, showcase fermentation techniques and infusion methods with herbs, plants, and fruits, creating delightful and flavorful combinations akin to a wine tasting experience.

Additionally, the restaurant introduces an exclusive rum crafted in collaboration with Maison Clément, featuring notes of cocoa, leather, vanilla, and a distinct grassy flavor.

La Table de Marcel, nestled within the restaurant, offers an even more intimate dining experience at the heart of the culinary journey. Limited to eight guests, this unique setting reflects the five elements in its ambiance and on the plate, providing a personalized dinner in 20 movements orchestrated by the chef.

Just days before its highly anticipated reopening, the Blue Bay Marcel Ravin earned further acclaim by joining the prestigious ranks of the world’s greatest restaurants at the 68th “Grandes Tables du Monde” Congress in Paris on February 4, 2024. This recognition, coupled with its Michelin stars, underscores the restaurant’s unwavering commitment to excellence.

During the inauguration of the Blue Bay Marcel Ravin on February 10, 2024, Stéphane Valeri, Deputy Chairman of Monte-Carlo Société des Bains de Mer, praised the chef’s journey, hailing him as an inspiration for the youth and a valuable asset to the Monaco community. He expressed optimism for the future, envisioning continued success for this collaborative endeavor.
